Piacere!, meaning "Nice to meet you," and Ciao!Ciao!, meaning "See you again," are like sibling wines born from the same tank. Fully filled with destemmed ripe Steuben grapes in a large tank, the juice that naturally flows out by its own weight is used for Piacere!, while for Ciao!Ciao!, the remaining juice is macerated with skins and seeds at 200%, extracting a moderate amount of tannins. Ciao!Ciao! is racked and bottled immediately after fermentation ends, so the lees do not fully settle, resulting in a slightly cloudy wine. Malolactic fermentation occurs in the bottle, creating a dry, slightly tannic, and slightly sparkling image. Because of the long maceration period, if you wait patiently until next year, the umami will be stronger, the flavor more settled, and it will be even more delicious. The wine remains enjoyable for a long time after opening; even after a week when the bubbles have dissipated, it can be enjoyed as a slightly chilled still wine. If you have the chance, comparing it with Piacere!, which was separated from the same tank, is also interesting, so please give it a try.
Ciao!Ciao! and Piacere! will be discontinued after this year. Our close cultivation partner, Mr. Ben Nakamura, known as Ben from Steuben, who connected us with the Aomori Prefecture Inakadate Village Grape Production Cooperative, has been helping us produce these wines since 2017. Now that he has retired, we no longer have a reason to purchase Steuben from Aomori without Ben. However, these two cuvées hold great significance for us. From 2024, they will be reborn and delivered anew. We sincerely ask for your continued support of the new Ciao!Ciao! and Piacere!.
