This wine is inspired by one of the wines first crafted by Hirotaka Meguro in 2015, Rosato 2015. "Bis" means "encore" in Italian. As the name suggests, this is a revival due to the many requests for an encore. The label is also based on the label from the first year of the FAF series. It is a rare wine, having only three vintages produced so far: 2015, 2020, and 2023. It is impossible to produce the same wine under different weather conditions each year, but it is also true that there is an interesting aspect to crafting wine according to nature each year. The wine is primarily based on table grapes such as Rosariobianco and Neomas, but due to a fortunate connection, we were able to receive some lightly colored Cabernet Sauvignon, which has been blended in using direct pressing as a Blanc de Noirs. The white wine crafted in this way is then infused with the pomace from the top cuvée Rosso and the Ohno Field Blend grapes from Ohno Farm in Takahata Town, soaked for five days (using the ripasso technique, which involves fermenting with the pomace of Amarone in Northern Italy) to add depth and volume. I hope you can enjoy not just a refreshing white wine, but also the various floral aromas and complexity it offers.
