The Iwate Prefecture-produced Yam Sauvignon × Campbell grapes were destemmed and crushed together and placed into an open tank. I wanted to be enveloped in the aroma while feeling the liquid temperature and fermentation stimulation throughout my body, playing with it for 2 weeks with hand plunging, and then pressing it later. To allow it to penetrate deeper and stay longer in the mouth, it was aged in French oak. After 8 months, when the edges began to soften, it was bottled. It made its appearance after being carefully rested in the cellar for about a year. The syrupy black sugar plum wine has spice aromas of cinnamon and cumin, while being firmly grasped by acidity, it also has the fruitiness of fully ripe peaches, with a depth of cacao that releases the aftertaste, repeating the thrill of tension and relaxation.
