Regular Price ¥3,300This is a Kamiyama field blend using three types of grapes (Merlot, Cabernet Sauvignon, Muscat Bailey A) from Mr. Atsushi Yoshida of Yoshida Orchard and Mr. Yosuke Akiba of N-mai Farm in Kaminoyama City, Yamagata Prefecture.
In the brewing process, Merlot and Cabernet Sauvignon, which were harvested at the same time, were destemmed together and fermented in a tank for about two weeks.
Muscat Bailey A was fermented alone for a long period of two months to give the flavor a deep berry character.
The timing to press the three types of grapes together was difficult, but by observing the fermentation daily and gently pressing at just the right moment to prevent oxidation, a very well-balanced liquid was achieved in a short pressing time.
After slowly resting in stainless steel tanks, it was bottled.
The taste features a lively yet solid fruitiness with restrained tannins.
Please enjoy the umami and broth-like flavors as if three types of grapes are dancing.
