Regular Price ¥2,860This is a dry white wine made using Kerner from Nakai Kanko Farm in Yoichi Town, Hokkaido. The grapes were in a healthy condition with few rotten fruits, so they were immediately destemmed, crushed, and pressed, followed by primary fermentation and malolactic fermentation using wild yeast and wild lactic acid bacteria. After that, it was aged in stainless steel tanks for about 7 months.
The appearance is a sparkling clear yellow. The aroma features the characteristic Muscat scent of Kerner, along with citrus notes and a dry mineral scent reminiscent of chalk. The taste has a gentle fruitiness that spreads throughout the mouth, but there is also a moderate bitterness due to the intentional destemming and crushing before pressing, resulting in a complex and three-dimensional flavor. It can be enjoyed right after release, but I feel it has sufficient aging potential as well. The addition of sulfur dioxide is kept to a minimum.
