Regular price ¥2,970This is a fusion wine of "apple" and "grape" made from Fuji apples and Pink Delaware (picked when slightly more colored than green Delaware) from Nanyo, Yamagata Prefecture. In other words, it’s "Rhythm and Blues" as well as "Apple and Grape."
Apple juice, slowly pressed with an apple juicer and not racked, is fermented at low temperature for three months. Near the end, Pink Delaware wine turned fermented orange and preserved without sulfites is added, then undergoes secondary fermentation in the bottle.
A distinctive feature without sulfites is the rich yellow of ripe apples and the color wrapped in the fermented orange hue.
The flavor combines the characteristic apple notes of cider with the finesse of the moderate acidity from "Pink Delaware," making it easy to pair with various dishes.
The carbonation is moderate, but the fine bubbles that dissolve in it bring out a stronger apple flavor from the second glass onward. The core of "Pink Delaware" keeps it lively, delivering a delicious taste that never gets boring until the last sip.
This fusion wine of "apple" and "grape" is something I wanted to create because I came to Yamagata Prefecture, the third largest apple-producing region in Japan.
I have always thought that if grape wine could complement the low alcohol content and the difficulty of bringing out acidity in "apples," it would make for an even more enjoyable wine.
As the name "R&B" suggests, please enjoy the "pleasant rhythm going down your throat" and the "heartfelt shout of 'delicious!'"
