This wine is made from Merlot grown in the Okitama region of Yamagata Prefecture. To reduce the strength reminiscent of the hot summer of 2023, the grapes were destemmed and crushed, then fermented at low temperatures for 60 days, with minimal stirring, utilizing the fact that the lees cap blocks air in the tank. This process creates a wine with more body compared to the usual sealed MC wines, and it also brings out "aroma" and "gentleness" more than typical fermentation. I wanted to express a smooth and easy-drinking wine from the hot Yamagata Merlot of 2023, which is why I used this method. You can feel a slight "pyrazine (green note)," but more than that, the smooth and juicy character stands out, making it a versatile wine for various occasions. Since it has undergone a thorough malolactic fermentation (MLF), I believe it offers an even more complex and pleasant aftertaste. Although the production volume is small, please enjoy this "plain Merlot" just like you would with "plain udon" or "plain soba."
