In 2018, we received support through crowdfunding when we established our winery, and it has successfully borne fruit. At our local vineyard in Ueno, we are cultivating 8 varieties of grapes: "Berry A, Merlot, Biju Noir, Pinot Noir, Syrah, Albariño, Chardonnay, and Mondeuse" using a pesticide-free trellis system.
Cultivating wine-specific varieties without pesticide application is quite harsh, but finally in 2022, we were able to harvest. Although we cannot process the varieties individually, we decided to do everything with low-temperature co-fermentation with the intention of "tasting the field." Slowly, slowly, we aim to express the "field."
"After bottling, the balance of both red and white wines was not integrated, but it has finally become a 'soft' taste that can express the 'terroir.'"
