
Curvedocchi / Kawauso 2024 (White) 750ml
Regular Price ¥4,950The 2024 otter was made by co-fermenting three varieties from our own vineyard: Albariño, Petit Manseng, and Vidal Blanc.
The otter has been wavering without a fixed variety for a long time, but for a while, we plan to make it based on these three varieties.
That year, production was only one barrel, less than 300 bottles.
The three grape varieties were pressed whole cluster in a press, then racked and fermented.
After fermentation, it is aged in old French oak.
The grape composition is 50% Albariño, 44% Petit Manseng, and 6% Vidal Blanc.
The top notes are aromas of various fruits such as pear, lemon, lime, and muscat.
When you take a sip, you can feel the rich fruitiness and expansive acidity, possibly derived from Petit Manseng.
Since it hasn't been long since bottling, it still feels loose, but over the next six months to a year, the contours will gradually emerge.
Since we are using two first varieties harvested in-house, we still haven't quite gotten the hang of it, the otter.
Every year, we want to explore what style suits best while taking on various challenges.
