Cave d'Occhi / Iron Pinot Noir 2023 (Red) 750ml
Regular price ¥5,940Carvedocchi, having long worked with sandy soils, is embarking on a new challenge focusing on “soil.”
Iron was born from Pinot Noir grown in the “Nobori” district of Yoichi Town, Hokkaido, where the red clay soil is rich in iron oxide.
Nestled in gentle hills and rich nature, Yoichi Town in Hokkaido is a cool, breezy area known as Japan’s premier “Pinot Noir” region.
The reddish-brown “clay loam layer,” formed over many years by the weathering of volcanic rocks and gravel and oxidation of iron, balances moderate water retention with excellent drainage.
This is a very intriguing region for us as winemakers.
In 2023, we harvested grapes from vines just 3 years old, bearing fruit for the first time.
Since this was our first grape harvest, we focused on whole cluster fermentation and gentle extraction fermentation management, which are standard practices for Yoichi Pinot Noir.
Please enjoy the distinct character of Yoichi’s red clay soil, clearly different from the elegant and light wines made from the sandy soils of our Kakudahama vineyard.
A complex aroma of cherry, plum, forest leaf mold, mushrooms, black tea, and glossy, mysterious red hues derived from whole cluster fermentation.
On the palate, vibrant youthful acidity and bright cherry fruit spread powerfully with the unique dashi-like umami of Yoichi, followed by a long, rounded, and expansive finish like a sphere.
This wine can be fully enjoyed now, but it’s also one you’ll want to watch evolve over 5, 10, and 15 years.
