Regular Price ¥3,850This is a wine crafted by young winemaker Ryusei Kusano, who aims to create a wine with a deep, nuanced flavor that you can savor slowly, rather than a wine with a clear and easily understandable taste.
"The 2023 vintage was made with my favorite blended wine. The grapes are Merlot and Tannat from Hokuto City, Yamanashi Prefecture, and Kerner from Yoichi, Hokkaido."
After removing the stems and crushing the Merlot, we added the juice of the Kerner pressed on the lees and pressed it after 10 days of light skin contact, then aged it in old barrels for 8 months. It is made with natural yeast, unfiltered, and no sulfur was added at both the time of fermentation and bottling.
The grapefruit and muscat from Kerner, the bonito dashi from Tana, and the refreshing fruitiness of Merlot spread out in layers.
"Kisui (きすい) is named after the brackish water of estuaries. It refers to the area between rivers and the sea where fresh water and seawater mix."
By blending and co-fermenting the grapes, the individuality of the varieties becomes ambiguous, resulting in a wine that is subtly delicious and makes you want to reach for another sip.
