Using 100% Koshu from the trellised vineyards in the Torii-daira and Hishiyama hill areas of Katsunuma Town, and the Shimo-Iwasaki and Todoroki-Hikawa areas, the juice is fermented with skins and seeds in the tank just like red wine. No additives such as antioxidants, enzymes, nutrients, or fining agents are used, and fermentation is done with wild yeast. It is aged unfiltered in stainless steel tanks and French oak barrels.
You can find aromas of spices from the barrel as well as white peach. It might also be good to let it age a little.
