In late October, when the first snowfall falls on Mount Yatsugatake, we hand-harvested fully ripe Merlot and slowly aged it in new French oak barrels.
In 2023, we were blessed with favorable weather and harvested fully ripe grapes.
Harvested at the best timing when the seeds have become like roasted nuts and aged in French oak (old barrels).
The blend of Merlot, Syrah, and Pinot Noir has a fruity flavor with gentle tannins, creating a soft and pleasant taste that is elegant.
