We used Muscat Bailey A grapes grown in the Kyo-to area on the northeastern side of the Kofu Basin for fermentation. After the primary fermentation is complete, we conduct a secondary fermentation with lactic acid bacteria in small barrels, allowing it to mature slowly, which enhances its softness.
It is characterized by a well-balanced flavor. The fruitiness reminiscent of Beaujolais and the inherent juiciness of the grapes result in a very delicious finish.
