After harvesting, let it cool in a cool, dark place for more than one day, crush it in bunches, and ferment together with the skins and stems in a low-temperature brewing room for three weeks.
After that, it is juiced using balloon press and fermented for another two weeks. No preservatives used; unfiltered.
