Merlot 93% from Iga City, Mie Prefecture, Kerner 7% from Yoichi, Hokkaido, naturally fermented, no added sugar, no sulfur dioxide added.
This is a red wine made by Marukyou Farm in Kawai Town, Nara Prefecture, using Merlot cultivated in Iga City, Mie Prefecture, and adding Kerner from Yoichi Town, Hokkaido.
Remove stems from Merlot and crush, then ferment at low temperature in a fiber tank. Perform punch-downs by hand about twice a day and press while there is still sugar. After that, ferment anaerobically in a stainless steel tank.
A somewhat wild aroma reminiscent of southern French natural wine, likely due to anaerobic fermentation after pressing, with notes of volatile acidity and red fruits. The acetic acid provides a pleasant umami sensation in the mouth, achieving just the right balance.
We blended a small amount of barrel-aged Kerner with stainless steel tank-aged Kerner, creating an image similar to adding Viognier to Schiller.
There are some green notebooks, and I would like to have them matched with sweetfish and so on.
