We blended our own Delaware and Alicante A grapes and finished it as a rosé sparkling wine using the rural method (Méthode Rurale). We layered it over the reddish plumage of the thrush. The bubbles are relatively gentle, but since it contains a bit of sediment, please chill well and let it sit before opening.
A vibrant orange-tinged coral pink hue. While there is a slight sweetness felt on the first attack, there is also a beautiful acidity characteristic of Yamagata. It has a richness unique to our own vineyard, and a moderate aftertaste lingers. Since no SO2 has been added, please be sure to store it in the refrigerator.
