Apassimento means drying in the shade.
As the name suggests, this is an experimental wine made by fermenting grapes that have been dried in the shade and concentrated.
And I thought, "Let's stop making delicious wine!"

The grapes grown with even more love are everything.

I wanted to aim for a wine that conveys its essential goodness purely and effortlessly.
Each is harvested in late September, and Muscat Bailey A is at the railing on the second floor of the winery, which was originally a gymnasium.
"Neo Muscat was shade-dried for two months in whole bunches on rice straw by rice creator Hiroki Sato from Tsunoda City."
Initially, I planned to prepare them separately, but since the quantity became too small,
We blended them together, as they are both Muscat Hamburg from the same parent.
Select all the rotten fruits that appeared during the shade drying, and after one month of fermentation in the tank,
Juicing with a basket press. After lowering the coarse olive paste, it is aged in barrels for one year before bottling.
It was released after an additional year of bottle aging.

I think the depth of flavor will come out more. Based on my image, I believe it will grow quite deliciously after 2027.
