Every year, although the grape varieties and production methods differ, it is made from these three types of grapes, combining table grapes and wine grapes.
Winemaker Meguro has been continuously producing this wine since 2017, and it is one of his cherished creations, aiming for a better Bianco each year by upgrading the production methods.
Starting in 2022, Delaware and Chardonnay are produced in the same way as Tirol, which is familiar from the Cat series. During barrel aging, the best-aged barrels are selected and blended as Bianco.
The fruitiness and crisp acidity from the Chardonnay. The rich body from the well-ripened Delaware. And the honey-like aroma and sweetness characteristic of the Stuben's Blanc de Noir. These three elements are combined each year. Additionally, in 2023, some barrels of acacia, which tend to produce floral aromas, were also used. While there is slightly more barrel nuance than the usual Bianco, it is complemented by fruitiness and complexity that are not overshadowed. I believe it has resulted in a very harmonious and rich white wine.
