The 2022 vintage is a blend of three types of cuvées. From 2022, we challenged ourselves with various new approaches. This wine was made by fermenting three different cuvées, each produced using different methods and raw materials, including destemming machines, hand destemming, and grape yield restriction (one cluster per new shoot). We performed cold maceration to extract pigments and carefully punched down the cap. After fermentation, only naturally flowing wine without pressing was used. Then, malolactic fermentation was carried out, followed by barrel aging. We regularly checked the taste and refined the wine in the barrels, transferring each cuvée from barrels to stainless steel tanks before blending. The wine was bottled unfiltered. This is a special wine that includes a blend of yield-restricted wines.
