We blended Chardonnay from two vintages (2022 and 2023) harvested from our own vineyard in Makioka Town. The result is a well-balanced wine with fresh fruit flavors and sweet aromas and nutty notes derived from the barrels.
This wine combines two wines that differ more in winemaking style than in vintage differences such as weather or grape ripeness.
In 2022, new barrel aging was done using sulfur dioxide. In 2023, fermentation was carried out in stainless steel tanks without added sulfur dioxide. While each bottled separately felt good in its own way, blending them created a wine with something new that develops exponentially as they complement each other.
