Fattoria AL FIORE / momo 2023 (Rosé Sparkling) 750ml

Our definition of the wine called momo is a rosé sparkling wine that is a blend of Muscat Bailey A, which was cultivated in Japan, and white grapes. However, to be honest! This year, it did not sparkle... In 2022, we finished with a field blend from Yosuke Akiba, who is passionate about wine grape cultivation, while in 2023, we mainly used Akiba's grapes and blended in some Bailey A that was used for a long maceration by Hayato Suzuki, a peer from the same Kamiyama city, to add depth and richness behind the lightness. After that, we added liqueur (a syrup made by dissolving wine with sugar or juice) to promote secondary fermentation in the bottle, but this year, we missed the timing of when the yeast in the bottle was hungry and the timing of adding the liqueur, so we have reached the present without secondary fermentation in the bottle. I probably don't think it will sparkle anymore, so we will release it as a still wine. This still shows that my brewing experience and knowledge in Meguro are still shallow and immature. I seem to need to get along better with the grapes and yeast (laughs). However, I believe that the components and balance of the flavor are updating to the best ever, so I really like it. The main component is a solid Bailey A with a strawberry-like fruitiness, blended with a Seyval that has a tropical fruit flavor, which underwent one week of carbonic maceration. There is no residual sugar, resulting in a dry finish. Getting along with living things is difficult no matter how many years you do it! That's why the fun and fulfillment also double. Well, with all that said, this is the rare character Momo-chan, which may only be available this year (?), so I hope everyone will enjoy it.
