Despite the difficulty of cultivating Pinot Noir in Japan, they boldly took on the challenge and won a bronze medal at an international wine & spirits competition overseas, making it one of the Japanese wines gaining worldwide recognition. Grapes carefully grown by master vintners are meticulously harvested, and only the best berries are selected. Fermentation is carried out in stainless steel tanks to fully bring out the pure aroma, delicate acidity, and smoothness inherent to Pinot Noir. Aging is done for about 16 months in old French and American oak barrels. During aging, the wine is racked only once, lightly filtered, and then bottled."
