In 2021, the company's own vineyard had higher sunlight and average temperature trends than usual years, with less rainfall and blessed with fine weather. The yield was higher than usual years, and the grapes were high-quality with a well-balanced high sugar content and acidity that matches it.

The harvested Pinot Noir underwent about 5 days of cold maceration, and the fermentation period lasted 14 days.
During the extraction process, we imagined "nimono" (simmered dish) and strictly controlled temperature and liquid circulation to prevent extraction of off-flavors into the liquid.
After fermentation, free run and press run were separated for malolactic fermentation; free run was aged in barrels and press run in stainless steel tanks for 2 years.
The overall ratio is a blend of 60% barrel-aged wine and 40% stainless steel tank-aged wine, bottled unfiltered.
A clean aroma that well expresses the characteristic scents of Pinot Noir such as strawberry, raspberry, blueberry, and cherry, with a slight scent of matured leaf mold, and the addition of French oak aroma creates a complex fragrance.
Although the acidity is slightly lower compared to usual years, it has a very clean acidity that enhances the richness of the flavor.
The solid color and somewhat strong tannins symbolize the blessing of fine weather, giving a high aging potential, and combined with the scent of French oak, it is finished as a classical Pinot Noir.
