This is a pétillant orange wine made using the nucleated Delaware grapes from the Honzawa Akahage area in Yamagata City, Yamagata Prefecture, which underwent fermentation and then bottle fermentation. The wine harmonizes the floral and sweet aroma characteristic of Delaware with a refreshing acidity, and the subtle astringency from the fermentation process creates a pleasant dry pétillant. In 2023, due to the very hot weather and little rain, we were able to harvest grapes with high sugar content. As in previous years, we harvested early to retain acidity, resulting in a wine characterized by a beautiful acidity and rich fruitiness. At the beginning of drinking, we recommend enjoying the clear upper layer, and gradually mixing in the sediment as you continue to drink. The taste will change depending on the amount of sediment mixed in.
