The 2020 Komikoji achieved the best grape quality ever due to improved cultivation methods and stronger yield restrictions. It reached a sugar content of 25 degrees at normal harvest, easily surpassing the Ogawa Komikoji 2019 Extreme. This wine clearly shows that "wine is determined by the quality of the grapes." After about 10 days of maceration fermentation, it was stored in stainless steel tanks and aged for about 2 years without racking (sur lie method).
As before, no substances other than grapes were used in this batch. Carbon dioxide was used to fill the empty space in the stainless steel tank during storage, and inert argon gas was used during bottling. Since no sulfites were added, we take great care to maintain quality during storage and bottling.
