The Japanese wine grape "Koshu" produces a wine that pairs very well with Japanese cuisine.
At Akiu Winery, we carefully select yeast and conduct a few days of low-temperature 'mash fermentation' especially to pair with sushi, extracting the pleasant aroma of Japanese citrus like yuzu and sudachi along with the umami of Koshu grapes.
