This wine is made using the "sur lie" method, which involves aging Koshu from Fuefuki City and Koshu City in Yamanashi Prefecture on the lees in a tank for five months. Normally, the sediment, which comes from the juice, is removed, but this sur lie method allows for a subtle yeast aroma and enhances the wine's flavor even further.
