Among the cat series, Sola is well-known as the charming Delaware sparkling.
"In previous years, we have released Sora from early spring to early summer, but unfortunately, it could not be released this year. The reason is that in 2023, due to the extremely hot weather, the ripeness of the Delaware grapes increased too much, resulting in the acidity dropping too low for it to be made into sparkling wine."
However, while continuing to ferment in barrels as usual, I noticed an incredibly high potential somewhere. As expected, after aging in barrels for a full year, it had evolved remarkably, and this means we need to reconsider the concept of Delaware in the future. This flavor has turned into a beautifully potential-filled wine that is completely unrecognizable at first glance as a Delaware.
