With the passage of time, due to changes in breeding and trends, the demand has greatly changed, and the value of Delaware is declining compared to before. Many farmers are responding by cutting down, replanting, or even going out of business.
However, we feel that the potential of indigenous Japanese grape varieties such as Delaware and Steuben is significant when it comes to producing wine in Japan.
Unlike the wine grapes cultivated in Europe, it is not easy to produce wine from them for various reasons.

The preparation involves pressing the Delaware after fermenting it in an amphora for 130 days, then returning it to the amphora, sealing it after fermentation is complete, and allowing for 3 months of oxidative aging. After that, it undergoes 6 months of barrel aging in old barrels before bottling.
At this point, there is still a slight hardness, but if you let it rest a bit before drinking, I think it will show more harmony in its flavor.
