Looking back now, the year 2021 was a big vintage in recent years.
The accumulated temperature is higher than usual, and although there are autumn rains, from mid-September to October, the weather has been consistently clear and mild, allowing us to watch the grapes with peace of mind.
In August, pruning is done, and leaves around the clusters are removed. In September, with a target sugar content of 20 degrees, proper thinning of the clusters is carried out. After allowing for an additional month of ripening, harvesting takes place in late October. At this point, from a harvest volume of about 2,500 kilograms, only the best grapes are selected for Rosso. Mr. Ohno's Merlot from this plot has a total volume of 3,000 kilograms, including the thinning, and from that, 1,500 kilograms will become Rosso.
It is a very precious and noble wine that can only be produced from half of the vineyard.
The Merlot from Ohno Farm is about 20 years old. During that time, the trees, having received Ohno-san's love wholeheartedly, have matured, and because of the time taken and the suitability of the land conditions, they have grown into wonderful grapes. Therefore, the preparation is kept simple. Strict selection is done in the vineyard, and only the highest ripeness grapes are destemmed. During the one-month maceration period, only a few push-downs are performed, with minimal care taken daily while monitoring the process. After that, the grapes are gently pressed and then placed into two large barrels and one barrique, where they are aged for one year before bottling.
This Merlot from Mr. Ohno is filled with the unique potential and characteristics of the land that cannot be found elsewhere. It has gentle tannins, a soft yet deep fruitiness, and while it may not have a striking impact, it offers an incredibly long finish and acidity. It is very elegantly crafted, reminiscent of Pinot Noir. Truly, it is a wine that lives up to the name of flagship, and among them, it was an exceptionally good year. Released after aging for just over three years, it is a wine that will continue to evolve even if aged for several more years to come.
