This is an estate wine that has been consistently produced in-house from cultivation, brewing, to bottling. It undergoes secondary fermentation in the bottle and is aged for 40 months. You can enjoy delicate bubbles thanks to the long aging process. This is undoubtedly the best sparkling wine ever produced by Niki Hills! Although it uses grapes from the 2020 vintage, it is labeled as NV (non-vintage) due to the young vines of the Chardonnay first vintage.
