Regular Price ¥3,080100% use of Kyoho grapes from Ukiha City, Fukuoka Prefecture. For fermentation, whole Kyoho grapes were placed in the lower half of the tank, and de-stemmed Kyoho grapes were added from above in a 1:1 ratio. By fermenting half of the grapes without crushing them, we created a partially MC (Maceration Carbonique) environment to obtain fresh aromas and flavors derived from MC.
After 21 days of maceration, we slowly pressed using a basket press and fermented in stainless steel tanks (the total fermentation period was about 40 days), followed by aging. On the final day of maceration, we sensed a faint volatile acidity, so after pressing, we chose to control the presence of volatile acidity at low temperatures, opting for fermentation and aging in stainless steel tanks instead of amphorae. After about 5 months of aging, we were able to achieve a pleasant acidity that is often lacking in the low-acid grapes like Kyoho, due to the small amount of volatile acidity, aiming for a refreshing rosé blend. While considering compatibility with various wines, we blended it with a red wine made from 100% Kyoho grapes from Ukiha City, which had been aged in amphorae, in a ratio of about 5:2, and bottled it on April 7, 2023. We performed two racking processes before bottling and used a small amount of sulfur dioxide during the blending before bottling.
Wild yeast used. Unfiltered, unclarified. No sugar or acid adjustments have been made.
