This is a Steuben from Mr. Toshinobu Kazama, a grape farmer in Nanyo City, Yamagata Prefecture.
Mr. Kazama has been a grape farmer for many years, nurturing and protecting the Steuben grapes with love every year.
We decided to create a wine that expresses the personality of Kazama-san, who is loved by everyone, and we brewed it with great care.
"The label features an illustration based on a photo taken of Mr. Kazama's family during the harvest."
I prepared it simply without doing anything complicated.
After removing the stems, the fully ripe Steuben grapes were gently pressed while conducting a short maceration to retain pure fruit flavors. The juice was then transferred to a stainless steel tank, where the lees were removed, and the yeast was slowly stirred.
"And then we determined the final fermentation stage and proceeded with bottling (primary fermentation in the bottle)."
Upon opening, it spreads a gentle gas pressure along with the unique cherry-like fruitiness of Stuben, and as time passes, it transforms into a softer flavor reminiscent of acerola and plum.
The gentle and permeating flavor that is kind to the body can still be enjoyed as a rosé wine even after the gas pressure has dissipated.
