After destemming and crushing the Merlot grapes, they were placed in a tank, and then the pale pink juice was drawn off into another tank for fermentation using the saignée method.
The extracted juice was slowly fermented at a low temperature of around 14-16°C after debourbage, in a layered manner, to achieve a more fruity finish. After fermentation in stainless steel tanks, the lees containing fibrous components and tartar were removed, and the wine was bottled with a pleasant amount of carbon dioxide remaining.
