Regular Price ¥3,850This is a special Pinot Noir named after "Chie Sakata," who serves as the brewing manager at Bernhard Koch. When I visited the winery in March 2023, the 100% barrel-aged Pinot Noir I tasted was so wonderful that it was decided to bottle it exclusively for the Japanese market.
Not only did we conduct tastings on-site, but we also asked Mr. Sakata to prepare multiple samples with adjusted new barrel ratios and flavors, allowing us to repeat the tastings until we finally bottled a cuvée that we were convinced was "the one!" Compared to the standard class "Fon Les (KA-610)," it offers a rich fruitiness along with complexity and pleasant flavors from the barrels.
We use grapes from the vineyards of the three villages of Hainfeld, Flemlingen, and Godramstein. The soil consists of mixed sandstone and limestone. The training system is cordon with a planting density of 5,000 vines/ha and a yield of 45 hL/ha. Harvesting is done by hand while sorting in the vineyard.
100% de-stemmed grapes undergo low-temperature maceration at 6 degrees for 4 days before alcoholic fermentation. After that, fermentation is carried out in stainless steel tanks with temperature control averaging 28 degrees. Aging takes place in French oak barrels (with a new barrel ratio of 5%) for about 18 months. There is no fining or filtration. Compared to "Fon Less," it has a rich fruit flavor along with complexity and pleasant flavors from the barrels.
