Regular Price ¥3,080100% Kyoho grapes from Ukiha City, Fukuoka Prefecture were used. For fermentation, whole cluster Kyoho grapes were placed in the lower half of the tank, and destemmed Kyoho grapes were added on top at a 1:1 ratio. Fermenting half without crushing the grapes created a partial MC (maceration carbonique) environment to obtain fresh aromas and flavors derived from MC.
After 21 days of maceration, the grapes were slowly pressed with a basket press and fermented in stainless steel tanks (total fermentation period about 40 days), then aged. On the last day of maceration, a slight volatile acidity was detected, so to prevent the volatile acidity from becoming too strong after pressing, fermentation and aging were done in stainless steel tanks instead of amphorae at low temperatures. After about 5 months of aging, the small amount of volatile acidity provided a pleasant acidity that is often lacking in Kyoho grapes, which have low acidity, aiming for a refreshing rosé blend. While checking compatibility with various wines, it was blended at about a 5:2 ratio with a red wine also made from 100% Kyoho grapes from Ukiha City that had been aged in amphorae, and bottled on April 7, 2023. The wine was racked twice before bottling, and a small amount of sulfites was used at blending before bottling.
Using wild yeast. Unfiltered, unclarified. No sugar or acid adjustments have been made.
