This is a Koshu sparkling wine made by producing base wine from "Koshu" grapes, followed by traditional bottle fermentation and one year of bottle aging.
Since the grapes are harvested with high acidity, it is common to adjust the taste by dosage (adding sugar), but this was finished as Brut Nature (no dosage).
Kochi, a sake culture known for its clean and dry taste. This wine also has a sharp, dry mouthfeel, but the sur lie extraction gives it a savory finish.
A citrus aroma mainly of lemon, lemon peel, lime, and grapefruit, along with nuances of aging such as bread and honey are beginning to emerge.
It can be enjoyed now, but it is a wine with aging potential.
