As the name suggests, all the raw materials, Fuji and La France, are produced in Nanyo City, Yamagata Prefecture. The pressed juice is divided into two tanks for separate brewing: one mixed with Fuji and La France and the other with only Fuji. During fermentation, pump-overs are performed twice a day. Just before the alcoholic fermentation ends, the juices are blended in a stainless steel tank, the reserved Fuji juice is added back to adjust the sugar content, and fermentation continues in the bottle. This is a Japanese cider that combines the freshness of Fuji with the juiciness of La France.
