Yokohama Winery / Port Town Masquerade Ball 2021 (Red) 750ml

The grape growers are a couple who relocated from Yokohama. On the last day of October, after several frosts, they waited for the sugar content to rise before harvesting. From the next day, the farm prepared for winter, marking the final day of harvest. We are deeply grateful to the couple for accommodating our request to extend the harvest. We were able to make a Cabernet Sauvignon wine of excellent quality. Because the grapes were in good condition, to bring out their natural qualities, fermentation was done with natural yeast and only a minimal amount of antioxidant was added.

A well-balanced acidity and astringency. Although the alcohol content is high, it is an easy-to-drink red wine with a solid structure and fruity flavor. It retains freshness, so further aging is also recommended. Pairs well with red meats such as beef and lamb.
