Amber wine mainly made from Shine Muscat, which has been in the lineup since last year.
Two aromatic varieties are used. Shine Muscat undergoes fermentation with lightly crushed whole clusters, and then whole clusters of Shine Muscat are laid again and slowly macerated and fermented for about two weeks. Since Shine Muscat is hard to crush, the grapes were crushed by hand instead of punch down to blend into the must.
Although it is a seeded cultivation, many of the berries are seedless due to mutation, so it is made with whole clusters, and by pressing strongly, it aims to give the wine a gentle astringency and bitterness.
Although it belongs to orange wine and amber wine, the color is pale and close to yellow.
Chachapeal is a coined word combining Chacha = a term meaning whole cluster must, and Peal = pale.
