Regular Price ¥3,400Our definition of the wine called momo is a rosé sparkling wine made by mixing Muscat Bailey A, a grape variety developed in Japan, with white grapes. However, to be honest! This year it did not sparkle... In 2022, it was finished as a field blend by Yosuke Akiba, who is passionate about wine grape cultivation. In 2023, we mainly used Akiba's grapes and blended in some Bailey A used for Bucci, which is long-fermented by Hayato Suzuki, a peer from the same Kamiyama City, to add depth and richness behind the lightness. After that, we added liqueur (a syrup made by dissolving wine, sugar, and juice) to promote secondary fermentation in the bottle, but this year, the timing of the yeast in the bottle being hungry and the addition of the liqueur was off, so secondary fermentation in the bottle did not occur and it remains so now. It probably will not sparkle anymore, so we will release it as a still wine. This still tells that my brewing experience and knowledge are shallow and immature. I probably need to get along better with grapes and yeast (laughs). However, I think the composition and balance of the flavor elements have updated the best ever, so I really like it. It mainly features Bailey A with a solid strawberry-like fruitiness, blended with Seibel that underwent one week of carbonic maceration, full of tropical fruit sensations. It has no residual sugar and is finished dry. Getting along with living things is difficult no matter how many years you do it! But that's why the fun and sense of fulfillment double. Well, with all that said, this is the rare character Momo-chan for this year only (?), so please everyone, thank you very much.
