Yellow Magic Winery / R&B 2022 (White Sparkling) 750ml

This is a fusion wine made from Fuji apples produced in Nanyo City, Yamagata Prefecture, and Pink Delaware grapes from our own farm (timed when they have just started to color a bit more than Blue Delaware). In other words, it is 'Rhythm and Blues, and Apple and Grape.' The apple juice, slowly pressed using an apple juicer, is fermented at low temperatures for 3 months without any clarification, and at the end, we added the Pink Delaware wine, which was made from our farm's orange wine preserved with no sulfur dioxide, and underwent secondary fermentation in the bottle. The rich yellow color of the ripe apples, characteristic of no sulfur dioxide, is prominently wrapped in the color of the orange wine. The taste features the apple flavor unique to cider and the finesse of the acidity from the 'Pink Delaware,' making it easy to pair with various dishes. The carbonation is moderate, but the finely dissolved bubbles enhance the apple flavor more strongly after the second glass. It conveys the deliciousness of the 'Pink Delaware' core that keeps you from getting tired of drinking until the end. This kind of fusion wine of 'Apple' and 'Grape' is something I wanted to create because I came to Yamagata Prefecture, known for being the '3rd best apple producing area in the country.' I have always thought that if grape wine could complement the lacking aspects of 'Apple,' which has a low alcohol content and is difficult to express acidity, it would become a more enjoyable wine. As the name 'R&B' suggests, please enjoy the 'pleasant throat feel rhythm' and the 'heart's cry of saying it's delicious.'
