We created this in response to requests for a "red wine dedicated to meat." Steak, hamburgers, ginger pork, twice-cooked pork, sukiyaki… etc. Japan has countless meat dishes. Therefore, we aimed for a "red" that is uniquely "Japanese" and blended accordingly. It is a "red" based on acidity. We thought that a flavor profile centered on acidity might be more interesting, whether chilled or at room temperature. Of course, a rich and heavy "red" is also delicious, but this time we ambitiously considered pairing it with "red-fleshed fish" as well.Refreshing, with a deep finish and sharpness. We combined the mellow "Steuben," the balanced taste of "Merlot," and the sharp finish of "Hokujun (Amurensis type)" to create a unique character. Malolactic fermentation occurs in the bottle, causing a "shower" effect when opened, but from the second glass onward, the bubbles disappear, allowing you to enjoy changes in aroma and flavor in the glass.
