In 2018, when the winery was established, we received support through crowdfunding, and the vines successfully bore fruit. At the local Ueno (Wano) vineyard, we cultivate eight grape varieties—"Berry A, Merlot, Beaujolais Noir, Pinot Noir, Syrah, Albariño, Chardonnay, and Mondebrie"—using pesticide-free trellis training.
Cultivating pesticide-free grape varieties exclusively for wine is quite challenging, but we were finally able to harvest in 2022. Although we cannot vinify each variety separately, we decided to co-ferment everything at low temperature with the intention of "tasting the vineyard." Slowly and carefully expressing the "vineyard."
After bottling, the balance between red and white wine styles was not yet harmonized, but it has finally developed a "soft" flavor that expresses the "vineyard."
