This is a white wine blended from Kerner & Chardonnay.
Kerner underwent 2 days of skin contact with 30% whole clusters, while Chardonnay was destemmed, crushed, and pressed.
After pressing, the juices were combined and fermented with natural yeast in old barrels, then aged for 7 months in stainless steel tanks. Sulfur dioxide was used only at bottling at 20ppm.
The citrus aroma of Kerner and the clear fruit of Chardonnay blend together, with a mineral sensation reminiscent of spring water from a mountain source.
My theme in recent years has been "the soft mineral feel of soft water" and "a gentle texture close to dashi flavor, something that can only be made in Japan."
I'm still exploring, but I believe this wine can be an answer.
The fennel and dill herbs, grapefruit, and the clarity and soft mineral feel of spring water from a mountain source create a pleasant experience, with a rounded, pure fruit flavor that gently spreads through the finish.
When first opened, it has a moderate tension but gradually opens up. As a stable wine, it maintains its charm without deteriorating even after a week.
