100% grapes from Nitta, Nanyo City, Yamagata Prefecture, where GRAPE REPUBLIC is located. The grapes are organically grown without pesticides other than Bordeaux mixture and without fertilizers or compost.
Using two amphorae, one batch consists mainly of whole-cluster Delaware grapes with high acidity and ripeness and thick skins, undergoing skin fermentation in amphorae for about 40 days.
Another batch is made by destemming Delaware grapes and skin fermenting in amphorae for 15 days.
Aged for about 9 months in amphorae. Fermented with wild yeast, unclarified, unfiltered, and no added antioxidants.
