The Pinot Noir harvested in 2023 was aged in barrels for 11 months. During the preparation, the tank was cooled to 3°C for 5 days to extract color. After that, we waited for the temperature to rise naturally and allowed for natural fermentation. The maceration period lasted for one month. The 2023 Pinot Noir has a softer taste compared to the 2022 vintage.
