Ripe Delaware grapes (only destemmed & whole cluster) are layered for fermentation and maturation
We have been fermenting and maturing for a year in 2023 as well.
After pressing, secondary fermentation is done in stainless steel tanks, bottled without fining or filtration.

It is a beautiful orange-colored wine. A faint sweet aroma of Delaware grapes can be smelled.
There is also a faint roasted atmosphere, with Yubari melon, apricot, and banana present. Expectations rise.
Phenol and acetic acid aromas are hardly noticeable. It's clean. (Compared to our usual products, lol)
The flavor characteristic is "rich umami!" It's an umami like drinking clam soup.
Maybe it has a lot of succinic acid. The umami that stretches and stretches keeps inviting you for the next sip.
Furthermore, the faint bitterness and astringency derived from secondary fermentation add a more complex flavor.

2023 was a year of intense heat with little rain.
You can sense nuances of caramel and other fragrant desserts.
It's already a finished dessert! The acidity I was worried about remains clean and firm.
Easy to drink, yet with a solid body.
It has become quite an amazing liquid.

In the four-quadrant classification at Domaine Shoo, it falls into the third quadrant: wild×deep.
It's a neutral-leaning wild×deep.

It can be served cold or warm. Please enjoy it as you like.
This one is always released with the thought, "I want it to go with ayu."
From early spring, wild vegetables, squid, shellfish, and then from early summer, ayu! That's the feeling.
It's also a bottle you'd want to bring to a sushi restaurant.
