We harvested Sauvignon Blanc grown in our own vineyard in Ota Saiwai-cho, Miyoshi City, and carried out the winemaking process.
Harvested over three weeks, we used four different types of yeast for each lot to bring out aroma and body, balancing fragrance and flavor.
Depending on the temperature, you can sense Japanese herbs like boxwood, as well as citrus, melon, and pear fruits.
You can feel the characteristic acidity of Sauvignon, making it a food-friendly wine that pairs well with Japanese cuisine.
